Facts about Sorghum

Pickett's call sorghum the dessert version of the poor man's food. Sorghum, which is sweeter than molasses, can be substituted for honey, molasses, or sugar in varying proportions depending on the recipe.

Twenty-five gallons of sorghum juice is needed to make one gallon of syrup. Fifty-five gallons of maple sap is needed to make the same amount of syrup. About an acre of good sorghum makes about 100 gallons of finished syrup.

 

 

Sorghum has healthy minerals found in no other sweetener, except honey. For example, Sorghum is high in:

Potassium

200mg per tablespoon

Protein

300mg per tbsp.

Calcium

30mg per tbsp.

Magnesium

20mg per tbsp
