Facts about SorghumPickett's call sorghum the dessert version of the poor man's food. Sorghum, which is sweeter than molasses, can be substituted for honey, molasses, or sugar in varying proportions depending on the recipe. Twenty-five gallons of sorghum juice is needed to make one gallon of syrup. Fifty-five gallons of maple sap is needed to make the same amount of syrup. About an acre of good sorghum makes about 100 gallons of finished syrup.
